JOB DESCRIPTION

About the role

Stamford Hotels and Resorts have an exciting opportunity available for a passionate hands on Sous Chef; this role will be based in Melbourne providing support to Stamford Plaza Melbourne.

As the Sous Chef, you will be responsible for planning and directing food preparation in kitchens. You will be involved with supervising other kitchen staff, keeping an eye out for problems that arise and seizing control of a situation at moment’s notice.

In addition to the above, other duties of this position include:

  • Assist with the control and management of food costs in line with budget, source ingredients in accordance with the Company’s sourcing policy and control production and portions in line with agreed specifications.
  • Ensure the kitchen is always maintained in the highest hygienic way and well presented.
  • Adhere to all Enterprise Agreement requirements, particularly in relation to the rostering of permanent and casual employees.
  • Assist with on-the-job training for new team members.
  • Keep up to date with the latest trends in the food service industry and work with the team to introduce new ideas regularly.

RECOMMENDED SKILLS/EXPERIENCE

REQUIREMENTS

Stamford Hotels and Resorts is looking for a person with the following attributes:

  • Minimum 2 years of experience in a similar capacity.
  • Experience in managing a culinary team in an upscale food and beverage operation.
  • Strong leadership skills.
  • Embrace personal accountability, sense of ownership.
