JOB DESCRIPTION

Job Summary:

We are seeking a skilled and experienced sushi chef to join our traditional Japanese restaurant team that has been functioning for over 20 years. The ideal candidate will have experience in a similar role and a strong passion for Japanese cuisine. The chef will be responsible for the preparation, cooking, and storage of food in compliance with approved menus and regulations. The chef will ensure a high standard of food quality and presentation.

Responsibilities:

  • Overall responsibility for the operation and organisation of all sushi preparation areas in the establishment, or multiple sites.
  • Receiving, cleaning and filleting fish, preparing seafood to be used in meals.
  • Plan and produce menus to the establishment’s standard.
  • Write recipes and cost all dishes.
  • Prepare or direct the preparation, cooking, and storage of food in compliance with approved menus and regulations.
  • Decorate special dishes or presentations in accordance with customer preferences and dietary requirements.
  • Supervise regular inventory control and place orders as needed.
  • Receive, weigh, inspect, and ensure the proper storage of supplies and perishable commodities.
  • Assist in the maintenance of kitchen records, menu sheets, and forecasts of food requirements.
  • Coordinate with kitchen staff on inspection routines of kitchen facilities, equipment, and utensils.
  • Participate in menu planning activities to include the determination of purchasing specifications, products and recipe testing, and menu development.
  • Make periodic and regular inspections of assigned units to observe the quality of food preparation and service, food appearance, and cleanliness and sanitation of production.
  • Ensure compliance with hygiene requirements for the establishment.
  • Maintain all records and sample items appertaining to the same.
  • Maintain a flexible approach to service different markets, including conferences, corporate events, and banquets.
  • Maintain a clean, safe, and organized work environment.

Qualifications:

  • Experience in a similar role.
  • Passion for Japanese cuisine.
  • Ability to work in a fast-paced environment.
  • Strong attention to detail.
  • Ability to work a flexible schedule, including evenings and weekends.
  • Familiarity with hygiene requirements for the establishment.
  • Knowledge of Japanese ingredients and cooking techniques.
  • Ability to supervise and motivate kitchen staff.
  • Strong time management and organizational skills.
  • Reliable and flexible to change.
  • Ability to work independently and as part of a team.

Location: Rotorua City Centre

Reports to: Main sushi chef, Owner
