Eau-de-Vie is an intimate high-volume cocktail and champagne bar that aims to set the bar for experience and indulgence. 

Located in the heart of the Melbourne CBD just off Flinders Lane, Eau-de-Vie is open Tuesday – Saturday and is an award-winning venue renowned for innovative menus and experiences focused on the artful pairing of food to high-end spirits, whisky and cocktails.

ABOUT THE ROLE

  • We are seeking an outstanding Bar Manager to join the Speakeasy Group 
  • Manage the extensive beverage offering to an exceptionally high standard, including quality control, ordering, budgets and stocktaking.  
  • Maintain stock control procedures with exceptional accuracy.
  • Inspire, mentor and manage the beverage team. 
  • Ensure beverage service is executed to perfection by the floor staff.
  • Be a part of the senior Management and decision-making team. 
  • Work with the Beverage Creative & Mentor (Kayla Reid) Be the creative leader for rolling out new cocktail menu’s. 
  • Follow The Speakeasy Group Management procedures in detail. 
  • Implement, execute and maintain outstanding levels of service, creating a benchmark for the wider team and inspiring and leading them to operate and deliver to the same standards.  
  • Ensure venue trainings and procedures are up to date and effectively communicated to the bar team

  • Have an exceptional knowledge and passion for spirits, cocktails, and Champagne.
