Top Culinary Trends You Need to Know in 2024

Nestlé Professional Commercial Advisory Chef and NZChefs Vice President Karl Seidel has his sight firmly set on a busy year ahead in the culinary world.
 
This year is shaping up to be an exciting one with culinary exploration and innovation to the fore. Both Nestlé Professional and NZChefs aim to provide a lead role in that space and support the chef community with menu development and more.

 


 


Looking ahead, Karl says there are a few things to keep a close eye on in terms of emerging trends.

Sustainability

Sustainability will continue to be king with an increasing focus on eco-conscious dining. This will come through across a range of areas from zero-waste work practices through to sustainable eating and food storage. 

AI

Artificial intelligence (AI) and augmented reality (AR) are expected to grow exponentially this year and beyond. No doubt this will start to show up more and more in busy kitchens all around the world. Expect increased use of AI to assist with menu and product development through to more personalised dining experiences and innovative tech. If you’re not onboard the AI train you risk missing out on business growth and opportunities.

Plant-Based

Plant-based foods will continue to thrive. Watch out for the emergence of new and interesting varieties including plant-based seafood and protein-enriched foods.

Flavours

Aromatic spicy flavours will continue to thrive along with those that have a regional association such as coconut, and Korean and Brazilian-inspired barbecue dishes.

Regardless of how things shape up for 2024, it’s going to be an exciting year of new and innovative menus, culinary delights, and some surprises like we’ve never seen before.
